Todolella cured beef carpaccio with rosemary-cheese mousse and summer truffle from Els Ports

Garden tomatoes with avocado, anchovy cream, smoked sardine and pistachio powder

Assorted croquettes: Morella-style, cured beef with caramelised onion and foie gras, and “Bolíssim” cod

Crispy noodles with mushrooms, spring garlic and foie-gras shavings

Crispy pig’s trotters stuffed with porcini mushrooms

Half a roast lamb shoulder

Charcoal-grilled beef fillet with garnish

Charcoal-grilled bone-in beef rib steak with garnish

Suckling kid-goat terrine in its own jus
